Has anybody tried smoking a meatloaf? I've heard that if you use your favorite meatloaf recipe along with a mild smokewood like cherry, apple or pecan, it comes out great. The recipe I saw calls for smoking at a higher temp. 300 - 350 to an <b>internal temp of 160 </b>using about three pounds of ground chuck or 1/2lb each of ground chuck and pork. You form a loaf and place it on a disposable foil pan. About halfway through, 1 hour, sauce the top and then continue to smoke for another hour. They say the main thing is not to oversmoke as ground meat absorbs the smoke much quicker then a hard meat like brisket. I was just curious if anybody has tried it?

I did a light smoked ground buffalo meatloaf a week or so ago.
Due to time restraints and cooking temp however did not cook in BS[:(]
It did turn out very good though.  I used Jack Daniels chips for smoke flavor.

Damn, I thought this was going to be a thread discussing the musical genius of "Paradise By The Dashboard Lights".[:D]

I've never done a meatloaf but have done burgers. They cooked up pretty fast at 225F, about 2 hours, but I had a shoulder & a chicken in at the same time.

The burgers were lunch, the rest was dinner![:p]

I'd be inclined to not put the loaf in a pan, just set it on the rack. All the meat will absorb the smoke evenly & you won't be left with a loaf stewing in a pan of fat.

hello david.i've done meatloaf following smoke and spice cookbook recipe.added a few spices,turned out great.

Hi Ruffinet,

Since my post, I also did the meatloaf and it came out very well. Next time, I might not use the bisquettes for the entire smoke as it was a little strong.
