It is a little like IR4 re entry look but really increases the bark and ability to spread a sweet flavor through out the butt.
Start with the regular mustard slathering with rub and then after the wrap and rest period warm maple syrup in a spray bottle (microwave just a bit to warm it) can be sprayed.
This lets the rub really stick and not become a gooy mess cuz it is a thin layer - just moisture. You can add more rub and repeat until you have a bark you want.
Smoke flavor seems to still get through - was afraid it would not. Anyway it is a way to build up the bark flavor available to spread through out the pulled pork without a messy effort.
