Title: beef ribs, a disapointment

I got the bright idea to smoke some beef back ribs with only Worcestershire sauce. Wife slow cooks short ribs in the oven with Worcestershire sauce and some water in a covered roaster. They come out super tender and very flavorful. I thought adding smoke to the mix would only make them better.

I sprayed both sides with Worcestershire sauce and let them sit on the counter while the smoker preheated. The smoker was stocked with 3 hours of hickory pucks, temp hovering around 225 F. After 2 hours I sprayed the ribs with Worcestershire sauce once an hour for 3 hours then wrapped them in foil and turned the smoker heat down to hold them for dinner.

There was NO flavor at all, no Worcestershire, no smoke, just a black bark that had no taste at all. The meat was cooked perfecty, moist, fall off the bone tender, but begging for seasoning.

I am picturing in my mind the Worcestershire sauce sucking up the smoke and a chemical reaction taking place leaving the tastelss, oderless residue.

Aww well, not one of my better ideas.

Better stay away from the liver then jimguy. HEE hee hee :D ;D I think Manx and I will hold the "Red Lantern" of smoking foopawyuktoemuss for a ways to come over that liver deal. :o :D ;)

Strange timing. I ordered some wood chips, and mustards form McIlhenny Co., the company that makes Tabasco sauces. The wood chips are from th Tabasco aging barrels. Well to make a long story short, the UPS man just arrived and in the package from McInhenny they sent me a free 5 oz. bottle of their new Tabasco Worcestershire Spicy Sauce. It's real good. Slap some of that on, I bet you get some flavor. ;D

It's strange, that you did not get any flavors. Three hours of smoke on short ribs sound like enough for flavor. Maybe you should make a marinade with the Worcestershire sauce and marinade for a while before smoking.

Aaaarrrrgggghhhh! You mentioned that "L" word again Pat!!!!  ;) ;D NOTHING can be as bad as smoked l*v*r can it!?  :-[ :-[ :-[

Joking apart I think people posting their failures is a very good idea, just makes me appreciate the successes all the more!!  :D :D

Thanks for the heads up about the chips! I love Tabasco and didn't know they had this.

A few years ago I got a gift basket and a catalog. I was surprised on how many products they have. I just had to try their mustard's. I also got a bottle of the BBQ sauce, which I think is unique, but not as good as Iceman's.

I haven't tried the wood chips yet. I need to wait for warmer weather and fire up the old Meco water smoker; but how could one go wrong using oak wood that has been soaked in Tabasco sauce. They must be promoting their Worcestershire sauce, so  I'm sure you will get a free bottle.

Interesting product selection.  I've got a bunch of items in my cart totaling a little over $20, but not sure if I'm going to place the order...the package might catch fire before it gets here. :D

As soon as I taste the mustard's, I believe I have tasted all of their condiments.
