Title: Potassium Sorbate Question

I noticed on another thread bot Gizmo and NePa are spraying potassium sorbate on their dryed jerky prior to packaging. Excellent idea guys!

I'm just wondering what mixture you guys are using? From a little research all I could come up with was 1 oz to a quart of water. Any idea as far as how many teaspoons to a given amount of water?

Actually I hadn't used it before.  Didn't think about it until Nepa mentioned it.  Not sure it is needed for me as I have consumed all the jerky I have made long before any of it would ever think of turning from age.  I did buy some recently along with some other stuff I had been wanting to try.
So, NePa would have to comment on the longevity question.

The potassium sorbate dont add to the shelf life. It just makes it so the white mold and the micro bugs dont get to it. I spray when i know the jerky will be out in the canister on the counter and when i vacuum seal the jerky to send to my sons. Sometimes they dont get the jerky for a couple weeks.

Thanks for the update.

Good timing.  I just received the package today along with the pork shredders, HM bourbon cure/spice, HM Inferno cure/spice, and cure # 2 (Prague).

Yes, Didn't read the description very well.  Was surprised when I opened the package to find they were plastic.  When I looked at them months ago, I thought they looked like metal.  As long as the points don't break off in the meat, I'll be happy.  Have a butt in the fridge ready to get rubbed and then into the smoker tomorrow.

Going to do a butt tomorrow also. Do you use peel eeze on your racks when you do butts.

Never heard of it.  Just soak the rack in the sink and use a soft bristle brush.

Its a liquid approved by the fda thats sprayed on racks so the food dont stick. Alot of big jerky makers use it, tasteless. I mix 1 tblsp with water in a spray bottle.

If you got the plastic ones from Allied Kenco Sales, you won't have to worry about breakage, unless you really misuse them. I have had mine for more the 18 months and used them for shredding, mixing coleslaw, lifting hams out of the roasters, and other things. I like them, they fit nicely into your hands, and they hold up real well. The only complaint I have with them is that I keep stabbing myself when I reach into the draw where I store them.

I fill a spray bottle then empty it into a large 7 cup measuring cup, dissolve 1 teasp in the water then back into the sprayer.

I got mine from ebay a couple years ago. Still sharp on the ends but my only gripe is one is upside down? the back molded part is showing.

NePa, just a little veg oil or what you like to use wont hurt any on the racks.  I have started to use a little in the bottom of the V drip pan. Seems to help the goo flow to the water bowl or so I have told myself.  If you are doing more than one, take a peek at the drip pan just to make sure the center hole does not get plugged.  I did 4 7 or 8 pounder for sons wedding last year and got enough goo to plug the hole... nothing happened but suppose it could.
