Well someone smiled down on me today, I found some Jimmy Dean Maple flavored sausage and some Owins Country sausage (Hot) in one pound packages. So I took upon myself to try these sence I have read so much. I smoked with apple wood with the smoker set at 220*. When the internal temp came up to 170* I pulled them off. Let them cool and sliced, the smoke was not over powering (smoked for three hours) the rest of the time was just waiting on temp to rise to 170* This was simple now gonna scramble eggs with the smoked sausage in the AM ::) The Cajun

One of my fondest memories as a kid was bacon, sausage and french toast for dinner! We continue this tradition frequently with my kids... It is a silly, special tradition.

The AM made it and I've been awake since three o-clock waiting for daylight----When I fineally got in the kitchen had eggs scrambled some of the good fattys (Owins Hot) cut into small picees and slice of cheese rolled up into a floured Tortilla and grilled in a skillet ::) Man that was MMMMMMMMMMMMMGood. Better than you know what, but when you get my age . Well ??? The Cajun
Fatties are a favorite at our house too. Life just doesn't get much better than a little fatty flavoring with a great breakfast. Glad things went your way.
