Title: Smoked Carnitas

I seasoned with cumin, cilantro, salt, pepper, adobo and a pinch of spanish paprica. Smoked for 20 mins (1 puck) with mesquite. I took to kitchen and placed in a 9x14 glass pan and covered meat with green salsa verde, covered with foil and baked at 300* for 3 hrs (don't drain liquid) Removed the foil and baked for 30 mins. Took pan out and tossed the meat then returned to oven and baked for another 30 mins. Do this until just about all the liquid/fat are gone and the meat kinda crunchy in spots.  While i was doing the carnitas i made a pan of mexican pinto's too. Try to cook the pintos in a SS pan they come out much better or if you have a mexican Olla de Barro its the ticket  ;D

Better than mommas carnitas  ;D

My daughter's husband brought home some carnitas yesterday. Just found this post and looks like I'm going to make this one to kick them up a notch. Did yours have the skin on them and if so did you cut it off?

I used a pork butt deboned and 2/3 of the fat cut off. No skin

The reason I asked is that the Carnitas that my sol brought home was just deep fried pork belly.

You can deep fry carnitas. My moms sister does hers in lard, mmm kinda good but not as good as my moms. I got em both beat  ;D

NePa,

I see you only smoked for 20 minutes then finished in the oven. Did you cut up the pork butt then shred it after the cooking was complete?

I cut it and seasoned it before smokin then cooked it in chunk form. After the 3 hrs of cookin i shred it with 2 forks, returned it to the pan uncovered and cooked.

After recieving a PM from Buck36; I finally got around to making this recipe, and it is really good. The only thing I will do different next time it to trim the surface fat to 1/8 - 1/4, and cut the thick fat veins out. The last few butts I've gotten were well marbles.

This recipe is now posted on the recipe site.

carnitas???  Never heard of these before.  ???

I'll have to look the recipe over and give it a try, always will to try something new.  :)

It is the perfect party food. We put out plenty of sides for people to make them how ever they like.....and absolutely addictive.
