Missed you folks. Left on June 20 and returned today. Air conditioner and then fridge went out in the RV. Luckily I had extended warranty so out of pocket costs were below $500. Otherwise a nice trip. Now I need to decide what to smoke and go to the store. Tired of eating out.
Probably need to start out with a short menu just to get back in the rythem.
12 racks of ribs for appetizer,
4 Butts
whole packer brisket, maybe too if you feel real ambitious.
6 Beercan chickens and 2 drambui smoked turkeys. :o

welcome back WC, We got back last week from our 2 weeks. Nothing major in the RV as for issues. One tank vavle failed, but local RV repair replaced it onsite for us.
We had an AC issue last year, in follow-up it might have been a bad batch of Fans in the A/C. Ours also under warranty last time.
We are out of Warranty period now.
We did ribs when we got back.
I bought a leg of lamb like the wife wanted, but with all the rain (finally) have not been able to smoke the critter yet. Not leaving the house Friday the 13th so if the rain will stay away for a short period I plan to do it up with apple. This will be my second lamb and I hope it turns out as good as the first one did. Unlike the last one, this one is without the bone.

Sorry about that Giz. Unfortunately a big umbrella generally will not work here during the summer months. We usually get some pretty gusty winds with the THUNDER storms here in Florida. I simply must get or buy a shelter for my little BS one day. 60 percent chance of rain here today and around here that generally tranlates to rain.
Hey Carter, the leg of lamb is real easy. Our local food store has pre-marinated butterflied hunks. The one that looked the best was almost 2 pounds (plenty for the 3 of us). Great seasoning already there, i.e. lemon, garlic, parsley, etc. Simply smoke at 190 F until 145 internal meat temp reached and FTC until you are ready to eat.
I would love to get some fresh lamb and season myself but pretty much impossible around here.

What a guy!
Rain is holding off thus far so what the hey, set up the BS, put lamb in on second rack (forgot to spray washables with pam - darn - I guess cleaning will take a little more effort), using maple instead of apple (since it was already open), put drip pan 2 racks down to catch the juices for gravy. Will smoke for 2 and a half hours at 190 - 200 and FTC when she is at 150. No pictures this time cause the camera is on loan to a friend. Time to pop a top and sniff the smoker for awhile.
Results are in on my second experiment with lamb. First time at 160 - 165 internal temp and it was too done. This time I took it to 145. Was planning on going to 150 - 155 but rain was approaching. :o Cooked at 190 for 5 hours (2 lb piece). Since it was already an hour past dinner time I sliced it instead of doing an FTC. A little too rare for my taste. :P FTC might have resolved it but I opted to finish for a couple of minutes in microwave. By doing so, the plate filled with juices (should have made some fries to soak in the juice). :D Nuked until medium. Taste was heavenly, tenderness was great except the thin end. Rain held off until the smoker was cleaned and put away. Next time I start a little sooner, go to 150 to 155, and FTC for a couple of hours. I got to write this down cause I think I got this one nailed down. ;D
