Title: combination smoking
Post by: Badger on August 09, 2007, 05:55:29 PM
Can you do ribs and a loin at the same time? I've never done a loin yet so I don't know how ling they take and what kind of prep they take.

Pork loin that is, maybe a pork butt instead?

I'll be doing some searching while you good folks chime in with your experiences.

Yes you can.  Be advised that Pork Loin is a lean tender piece of meat so would not be treated like a brisket or butt.  I usully turn pork loin into canadian bacon so I won't offer much in the way of cook time there.  Ribs you will smoke for 4 hours and usually are "cooking" for a total of around 6 hours if you are using low and slow for the duration.

Yes you can smoke both at the same time; but the loin may be finished a little earlier than the ribs. You should be able to fine a few good pork loin recipes on this site. BigSmoker posted a stuffed pork loin recipe, and here is a recipe from the recipe site.

I generally only apply 2 hours of smoke to both pork loin and ribs. Whether you are using it as a roast or as Canadian bacon, it will smoke/cook the same. I generally will take the loin or Canadian bacon out at 140°F-145°F.

FWIW, Tsquared's loin recipe from the recipe site is delicious.  Cooked up that one for mother's day.  Check out this thread: http://forum.bradleysmoker.com/index.php?topic=5223.0
