Title: Rib Recipe's and cooking recommendations
Post by: Carter on September 04, 2007, 09:50:17 AM
I'm planning on doing RIBs this weekend.  I've made them using the Smoke n' Spice Cookbook (Apple City back ribs are really good), but I was looking for ideas from the recipe site.

I noticed that the Recipe forum doesn't seem to have any RIB recipes.  Did I overlook it?

The reason I'm interested is that I found the cookbook's times were way off for the RIBs I've done previously.

I haven't checked previous threads from this forum yet (which I will be doing over the next couple of days).  I was just surprised to see no posts on the other forum.

Are you looking for seasoning ideas, slathering ideas, cooking techniques, all of the above?

For recipes, I like the Smoke N. Spice, but also like Paul Kirk's book, Championship Barbeque.  Lots of good choices in the latter, particularly the "mustard ribs."

As for technique, here's a link to Iceman's competition ribs technique and another to a summary of different nuances I've noticed in techniques posted here:

These are great Consiglieri.  Really interesting facts about boiling & fat.  Looks like I'll be getting the 3 hole punch out.  The Bradley Binder continues to grow.

I lose stuff in the binder (too many cross references).  So now when I see a good post, I save the link in "favorites."

I think this worked out as my favourite smoke of the summer.  My wife would say Kummok's salmon.  I'd say it's a tie with these Apple City Ribs with the Apple City Sauce from Smoke n Spice.

2 hours of hickory and a six hour cook job.  All in the smoker.

CARTER!!I got home late from work tonight to a lousy plate of leftovers--you're driving me nuts with that awesome picture! I tried the apple city recipe earlier this year too and they were great. Good job. where did you say you lived?

Thanks everyone.

I've always liked Ribs, but the Bradley has really helped me appreciate just how delicious they are.
