Have you used it for skinning pork bellies? I've been looking for a knife that would make this task a lot easier.
I'm still in the process of trying to decide on what 12" slicer I want to purchase. :-[

Yes, mainly used it to skin pork inc belly and I have been very impressed. Think we discussed a while ago about the round ended salmon knife I had been using which was working pretty well, IMHO this is a lot better and more controllable. :)
Also got hold of a nice set of Henckel Five Star knives today, looking forward to trying them out although I paid about a quarter of the price on Amazon.

Next new toys to try are a new meat grinder/mincer and a new sausage filler which are arriving sometime this week, also getting a variety of new sausage herb mixes to try.

Geez Manx! You setting up shop or what? I want to be on the sausage mail order list for sure. ;D I always like it when Ann tells me to go "stuff it" :o I just nod and say K then go make some sausage links. :D ;)

Now that we are in our new house we have a lot more space to set up a proper food processing area. It needs a new kitchen in any case so now is the time to get everything set up for the future. ;)

I have a Calpholon block knife set that has worked really well. The knives are heavy but durable
I'd like to get one of the rotary knife Bettcher Whizard Series II Trimmers. Saw one in action on How It's Made (they were doing bacon) and that thing is easier than running a hair trimmer over your head for a clean shave. Just can't find a purchase source. Kind of like the "Tim Allen" approach as it is ran by compressed air, Arrh Arrh Arrh.

I ordered one of these knives and just used it on a belly I have curing for Pancetta. It is a Great knife. Thanks for the tip Manx. Weschenfelders is a super outfit to deal with as well.

I couldn't find that knife in the US, so today when I ordered some Soy Protein Concentrate from Sausage Maker I ordered their 6" skinning knife. Hopefully it will do the job.

That is one intimidating knife Tom. Don't know if I'd feel comfortable with that in hand. Just the name says leave it on the counter or lock it up in a cabinet. Wouldn't want to tempt Lorena.

From my dealings with them so far I would thoroughly recommend them, glad you like the knife Tom. I keep mine well out of reach of the kids, not even let them see it yet!! ;)
