Title: Jerky OBS Style

Hamburger jerky Bradley style.

Did 4 lbs yesterday for the gang at work. This is all i have left.

Cut into squares for easy eatin.

So did ya extrude it onto the screen/mat/rack or just roll it out thin and smoke/dry it as a sheet?

I used my jerky shooter onto some 1/8" SS screen that fits on my racks. Smoked for 1 hr 20 min @160 with hickory then 1 hr just heat @ 170 then into the dehydrator for 3 hrs @ 150. Cut into bits size pieces and into a paper bag for a couple hrs shaking once in a while to take up any grease.

Cool.  I may try the "sheet of jerky" way of making some, just to see how it would work, especially since I loved the little bite size pieces I cut my strips into on the last batch.  May even just use slices of the roast I'm going to jerkify and cut it down once done.

When I use ground meat I extrude it as well. I have 5 or 6 tubes for the Jerky Gun so I just fill them all at once and I'm good to go. Just load a fresh clip... ahhh, Tube.  :D
When using ground meat I use the Bradley Jerky Screens on the regular racks (8 racks). I give them a quick spray with Pam and you're good to go!

NePas... I still have to get my hands on one of the Cabelas Dehydrator. I'm just a little shy about paying $500 for it because they will only send it by air. I will have to see if I have any buddy's going anywhere this fall, providing they have room for it. Either that or suck it up and just pay for it.  ???

I see they are on sale right now, any idea how long they will continue to on sale?

They have been $249 for awhile now. Dont know when the sale will be off.

Nepa,  How do you clean the netting sheets for the dehydrator?  I dryed some liver the other day for dog treat, which Yoda loves, and some stuck pretty tight.  Next time I thought I would try spraying with pam.

When i do a dehydrate with something thats kinda sticky i spray my sheets with Peel-Ease.

It may have have cost me $150 in shipping for the dehydrator but holy crap! It arrived in 3 days!

We are not used to fast shipping like that here in Canada!  ;)

Great looking jerky. I tried using grinds to make jerky and snack sticks a few years back and have been very impressed...with the quality and ease of making of the product.
