A work-mate gave me a couple of beautiful Sockeye (King?) Salmon's on Friday, so the plan was launched to smoke them on Sunday. I spent a beautiful Autumn afternoon doing yardwork, sampling ales and smoking the salmon.

I Fileted (sp?) them on Saturday afternoon. Only my second time at fileting, so not the prettiest job but not bad either IMHO

Final product.. Tastes fantastic. I'm just enjoying some on a cracker with local cream cheese and capers. Cheers
