Title: Bradley Cure Recipes

The Recipes they promised are now posted on their website.  It's an almost 60 MB pdf download, so have patience when you do it.  I saved it to my hard drive so I can access it without downloading the whole thing again, or using 35 sheets of paper.

Saw a few that I may try from the Maple section...I'll look at it more when I have more time.

Just thought ya'll would like to know.

Hi Tim, I have been wondering if the Bradley cures contain any "nitrite". Could be the answer to me trying to find Instacure #1. ;)

I've got another post floating around here with the ingredients for each listed...most have nitrite, while one has nitrate.  These cures also contain a lot of other ingredients, including flavors, that you may or may not want in your finished product.

Let me check on something, and if it looks favorable, I'll send you a PM.......

Hi Tim, I got a reply from Bradley regarding their cure mixes
"Yes we do have nitrite in our cures. This item helps to keep the color of the meat. Our cures should work just fine for what you would like to accomplish. "
I was thinking of trying their Maple Cure to replace Morton Tender Quick in Habs Canadian Bacon recipe.
Going to check the PM.

This weekend I tried the Bradley sugar cure and recipe for salmon jerky. The result was edible, but not much more.

This is the first time using one of the Bradley cures so I don't have a sense for the strength of flavors in the cures. The salmon tasted like smoked fish, which is fine, but I expected more from a product called jerky.
