Title: More Prime Rib Questions

Have a 7.5 pound piece o' prime rib.  Looking to smoke it a little bit, then finish it up on the grill to get a nice crust.  How long/temp in BS before putting it on the grill at 350 for the final hour?

I would usually do the meat for a little under 2 hours on the grill, but I'm trying to add the Mesquite Smoke flavor.  Figuring the BS doesn't get too hot, 1.5 hoours in the BS at as high as I can get it (maybe 250), and an hour on the grill at 325 - 350?  Looking to serve it at 140.

Any advice? ??? ???

My thoughts would be to smoke it at low temp in the bradley with 1.5 to 2. hours of your favorite pucks.  Mine is not mesquite but that is me.  If possible do this as a cold smoke set up and let it overnight in the fridge wrapped tight or in a zip lock.  Do all of your cooking to temp on the grill or oven.

The overnight really seems to help deploy the smoke flavor but if that is not possible do the same thing and go straight to the grill.

I have not done Prime yet, but what WKC says makes perfect sense.  This is the best method I have found doing any beef steak with the Bradley.
