Title: Iceman to the rescue
Post by: Oldman on November 14, 2007, 05:50:11 PM
Smoked a butt today. There is one constant that never lets me down. It is Iceman's rub. I'm sure that there are other companies that are constant, but I think you will have to walk a long mile to beat Iceman's rub and sauce.

BTW in this week's chat I found out that Iceman (from another member) now offers a mild sauce.

If you have not given his stuff a try I believe you are shorting yourself. I've been on this board long enough that those who have been around know I don't rag on something unless it is down right worth talking about.

Thanks Iceman... between the rub, the sauce,  the pork and that quart of cold milk this is one happy Oldman. Mother and Susan also ate a bunch of it too...no milk for them though  ;D  (yes this Oldman drinks milk... 4 - 5 gallons per week... I have my whole life.)

;D  Both sauces are great.  I also like his rub.  Did two butts yesterday and finally figured out the right dose of his rub.  On butts - lots.  On ribs - just a light dusting.  ;)

You got that right Wildcat! But why is that? Lots on butts and a dusting on ribs. Time? Meat thickness? I've given up putting brown sugar on ABTs for a light dusting of Ice's rub too. KILLER!
But why is that? Guess I'll just have to keep using it on everything until I have the answer. It's a low down dirty job, but somebody has to do it. As for mild sauce, who needs it? Iceman's "sauce with an attitude" has just the right warm aftertaste for anything you use it on.
Gonna go to work on an Alaskan Pipeline for sauce and get it direct from the source. I get the Iceman's shipment within three days time but the withdrawal is getting unbearable. Anyone who hasn't tried his rub and sauce is missing out! ;D ;D ;D

The answer is simple.  Ice has a powerful and wonderful rub.  Ribs are not near as thick as butts, so butts naturally take more rub.  If you spritz your meat like I do, butts also get more spritzing due to a longer cook time and there is more fat to drip off so the rub gets a little more diluting.

As far as his sauces, some folks (like my mother and mother-in-law) do not tolerate any heat at all - hence the mild sauce is better for them.  Taste is the same, just no heat.  ;D
