Thanks so much for your advice. The rib roast is back in the frig after two hours of smoke. Took all of your advice and was able to keep the box temp no higher than 90 by opening the door as needed, propping the door open and just all around being attentive to the Maverick ET-73. All of you are the best. I so appreciate you guys offering your wisdom to guys like me.
