I hope everyone had a great holiday. I have a pretty good amount of leftover turkey and was wondering if anyone had any favorite leftover recipes they would like to share.
I made some turkey enchiladas over the weekend and usually make up a bowl of turkey salad for lunch but was looking for some new things to try.
I normally just have enough left for a few sandwiches and possibly enough to add to chef's salad, so have not experimented with anything else.
You can make an awesome soup with the carcass. My favorite post Thanksgiving turkey dish. I'd also grind some of the white meat, mix with ricotta and some fresh herbs and make ravioli. Did that with some left over chicken recently and it is great. Served sage flavored brown butter on top with crispy sage leaves.

IMO, sandwiches and soup are the best uses for leftover turkey. Wife, on the other hand, likes to experiment, and have to admit that some of these are okay (check out the typical recipe sites):
Turkey tetrazzini (essentially a noodle casserole). Or Turkey ala King which isn't much different..
Turkey enchiladas (whether the real McCoy, or a enchilada casserole)
or cold soft turkey tacos with avado and the other other fixings.
But I'd rather have a turkey sandwich on french bread, with a bowl of fresh turkey-vegetable soup.
Ann came up with a white bean and turkey chili that was dynamite. I'll hit her up for the recipe if anybody wants to try it. Very simple and fast.
Lay it out there Ice. If needed I can always leave out the beans. ;D

For supper last night, I took 3 cups (each) of minute rice and water, put them into the microwave for 9 minutes. While that was doing it's thing, I diced up a bunch of my leftover smoked turkey...mostly the white meat, probably 2.5-3 cups worth, got some cream of mushroom soup out of the cabinet and 5 slices of American Cheese out of the fridge. After the rice was done, I put the cheese on, then the soup, then the turkey...popped it back in the microwave for 2 minutes while I grabbed a plate and fork. Supper was served (did grind a little black pepper over the top before consuming a good portion of it).
I do turkety croquettes...easy if you have a grinder...some onions...and "other stuff" and breadcrumbs! Fry em up!!! Life is good!!!
Found a White Bean Chili recipe I tried last night. Very easy to prepare and it was very good. Pretty spicy though so be careful. Here is the recipe. I only added half the amount of jalapeños and it was still hot. I also didn't add the cheese. This was very good with a few tortilla chips.
INGREDIENTS
1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
1 (4 ounce) can diced jalapeño peppers
1 (4 ounce) can chopped green chili peppers
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14.5 ounce) cans chicken broth
3 cups chopped cooked chicken or turkey
3 (15 ounce) cans white beans
1 cup shredded Monterey Jack cheese
DIRECTIONS
1. Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeño, green chili peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.
2. Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.

Ann and I LOVE that LS. We do a lot of smoked chicken curry over rice also. :P :P :P :)
Yes. Curry turkey does sound good.
My hubby..."The Brit" makes the best vindaloo curry I have ever eaten!!! Never had one eating out like it!!! Using turkey now but usually lamb or chicken...oh boy...papadums (sp?) onions, toms, chutney...I'm gettin' hungry!!!
I think I'm going to see if the grocery stores have any left over turkeys. These posts are making me hungry.
Here you go folks. This is the one Ann made from the Williams-Sonoma catalog.
White Turkey Chili
2 Tbs. Olive Oil
1 Large yellow onion diced
Salt and Pepper to taste
2 tsp. toasted ground cumin
5 cloves garlic, minced
1 jalapeno seeded and minced
1 pound Anaheim chilies, roasted, peeled and diced, or 3 cans (7 oz) whole fire-roasted Anaheim chilies, diced.
4 to 4 ½ cups low sodium chicken broth, warmed
1 pound diced cooked turkey meat
3 cans (15 oz) cannellini beans or white beans, drained and rinsed
2 Tbs. minced fresh oregano
1/3 cup minced fresh cilantro
¼ cup cornmeal
Shredded jack cheese, sour cream and lime wedges for serving
In a large pan over medium heat, warm oil. Add onion, salt and pepper, cook, stirring occasionally until softened, 5-7 minutes. Add cumin, garlic and jalapeno, cook, stirring 30 seconds. Stir in chilies and 3 ½ cups broth; transfer to slow cooker. Stir in turkey, beans, oregano and cilantro. Put cornmeal in small bowl and whisk in ½ cup broth. Stir into turkey mixture. Cover and cook on high 3 hours. Thin with more broth if needed. Ladle into warmed bowls. Serve with cheese, sour cream and lime wedges.
Serves 6 - 8

No turkeys, but there were some boneless "enhanced" breast roasts at Costco. I'll be making sandwiches for a while. Maybe I'll take half and try some of the ideas here, including that white bean chili
