Made about 40 Turds and a fattie with jack cheese, cooked bacon, a few little smokies and some green onion all mixed up. This was my first time ever making a fattie and everyone loved it. For the main dish i BBQ'd 16 duck breasts and thighs. Also had greenbean casserole and EXXTRA HOT cesar salad. Everthing was Great!!

A fattie is a gift from the gods!!!! I start with a one pound log of sausage, i like the Jimmy Dean bold flovor, and roll it out like pizza dough between plastic wrap so it is like a pie crust or a pancake. Then let your stomach tell you what to fill it with. I filled mine with about a 1/4 lb of Jack cheese, about 6 left over pieces of bacon from the ABT'S, 3 left over diced Jalap's, diced green onions, left over diced up little smokies. mix all that together and form it into a log and plac in the middle of the sausage. Roll the plastic wrap and th sausage aroung the filling. Be sure to seal the sausage around the filling so that when you smoke it none of the cheese oozes out. I smoke betwen 210 + 225 for about 2 hours. Be sure that you let the fattie rest for about 20 minutes before you cut it. If you dont all that melty goodness will ooze out. Slice and feel your heart slow down. ENJOY!!

The ABTs look awesome too. I usually use chopped up pullled pork but yours look interesting. There is the pepper, cream cheese and then something on top. What is it?

Thoes are Little Smokie Sausages with Cheese in them. They are VERY tasty!
