Title: Hickory Salt??

Hello all- I was going to do some chops and the recipe called for hickory salt from butcher packer.  Obviously since it has to be ordered, there is no way I can use it today.  What IS hickory salt anyway and can I use something else for the time being to get a similar result?

Welcome to the forum.

It's hard to give you a reply. Usually hickory salt is large crystal salt that has been smoked with hickory. Since you are purchasing this from butcher packer; it could also be one of their premixed cures. Can you provide a link to this item.

If it is just smoked salt, you can substitute kosher salt, but you won't get the smoke flavor. If you are going to smoke the item any way, then it should not matter.

If one of your grocery stores carries Spice Island spices, there is a good chance you can pick up a container of it locally.

I have a few rubs that call for it as well. If I am out of it at the time I just substitute the same amount of kosher salt.
