I use the standard vaunted vinegar recipe, but substitute Nakano Original Rice Vinegar. If you use the rice vinegar it's important to use the Nakano rice vinegar because it is seasoned, and is sweeter. They have other flavors you may want to experiment with. Such as the red pepper flavored. If you like it more vinegary use apple cider vinegar instead of the rice vinegar.

Vaunted Vinegar Sauce Ingredients:
1 cup Cider vinegar (or Nakano Rice Vinegar, Original or Red Pepper Flavor)
1 Tbsp. Brown Sugar
1 tsp. Kosher Salt
1/2 tsp. Black pepper, fresh cracked
1/2 tsp. Red Pepper Flakes
Directions:

Place all ingredients in a small sauce pan.
Bring to a boil, and then simmer for 5-10 minutes.
Let cool, and season pork to taste.

My recipe is basically the same as Habs except I add 1/2 cup of ketchup and another Tbsp. of Brown Sugar to the Cider Vinegar. I also top the sandwich with a Coleslaw made with 1 cup of Mayo and 1/2 cup of the vinegar sauce. It's best if the Slaw is made the day before.
