Title: Is Insta Cure #1 the same as Prague Powder #1 ?

 ??? Very new to this, and I have been reading, reading, and more reading. I see some recipes call for Insta Cure #1 and some call for Prague Powder #1. Are these the same thing? And interchangeable in the same amounts?

Also is there a mail order supplier in Canada? I have looked at stuffers.com, but can't find either on the web site.

To my knowledge they are the same. The main thing you want is the #1 part because there is a #2 as well. If my brain is working correctly the #1 has Nitrite in it and the #2 has both Nitrite and Nitrate.

There should be suppliers all over the place in Ontario. Just look for a sausage supply store. I'm in Moose Jaw, Sask. and we have JB Sausage in Regina about 40 minutes away. They sell that cure (they call it SuperCure) for around $10 or $12 for a 5 lb bag. At 1 teaspoon per 5 lbs that's alot of cure.

Hopefully Habs will comment on this, he's the king and refered to as "IronHabs".  ;)

They are one in the same.  Instacure #1 is known by many names, but the main cure ingredient is 6.25% sodium nitrite. ;D

Simple answer is yes, they are the same. #2 is used more for making pepperoni and other dry cured meat products.

The last time I ordered InstaCure #1 from Sausage Maker the description underneath stated "Use to be called Prague Powder #1". The industry has come together and made all cures that have the #1 (cure #1) with the same formula, as with the cures that are labeled #2. The only cure that I rarely see a number after is DQ, if you see DQ powder that is the same as InstaCure #1. Pink salt is another term that can used as a name for cure #1

Welcome aboard. Just be sure to stick with the exact prescribed amounts of pink salt according to the recipe and keep it sealed and out of reach of children and pets. You cannot experiment with this stuff like regular salt.
