Pastrami for sure, but that'll be smoked for 4 hours Fri or Sat and finished steam style on Sunday. Curing as we speak (thanks for the recipe and technique, Habs)
I'll bet some pork butt falls into the Bradley at around 5pm Saturday and some ribs about 7am Sunday. ;D
And I'll bet some Anchor Liberty Ale manages to find its way into my mouth along the way too. I like the hoppy beers, and I think this one is my favorite.

LaQuinta, Do you think some Atomic Horseradish would go well in the Beef sticks? Could be like eating a prime rib on a stick type concept. I could have just invented the newest snack craze.

Atomic Horseradish is the hottest horseradish I have been able to find. It is used by many upscale restaurants for prime rib and other dishes. A waitress at one of the steak houses here told me they use the opening of a new jar as a right of passage for the new wait staff. The newbies get to get the first whiff when the seal is cracked. Apparently it causes slurred speach, blurred vision, and some minor loss of respitory function. Yep it is that gooooooodddddd. I wish I could get the 1 gallon jars but I can't eat that much and it does lose it quality so I just get the 6 oz jars. Bought 1/2 case this time so I could give a few away for presents at the Perris Speedway. I love to make c0cktail sauce with it. Grab a tail, dip, chomp and instant brain rush. Nice thing about horseradish is the burn doesn't stay with you like jalepeno, cerrano or habenaros do.
Giz...Atomic beef sticks? Yeah baby bring em on!!! Try it with one load...hell (not really a pun intended!!:)) I'd eat them in a heartbeat!!! Maybe do a mild load and a nuclear load of sticks? I'd love to see O's head go red!!! :)

The steaming technique, although more work provides better results. I now feel the 160°F internal temperature is best. It's a little tougher at that temperature, but as long as you cut it thin against the grain, it works out great.

Smoked chicken legs.... my neighbor (brother in-law) loves them thus requested them!
So we'll be bringing them over to watch the big game.
