Title: Question: Kummock's salmon temperature

Hello all,

Do you know what the target temperature is for Kummock's hot smoked salmon? I'm going to be making some for very special friends and I want to be sure I reach the correct temperature that ensures safety.

I generally take fish to an internal temperature of 145°F.

Thanks a lot HS. I've got them in now and am finishing up with the smoking segment. They should be finished around early evening.
