Gonna try Alton Brown's recipe. He's usually is on the money. Anybody ever tried it?

Not yet, but it is on my list after pastrami. I've done Canadian Bacon and Belly Bacon.

HTC, I tried it yesterday - it is easy to make and no problem to eat.  It is a "keeper" recipe.
