I think it must be the carnivore festival here. 26lb's of pork butts went in last night, I picked up an 8lb brisket that is curing with Habs Pastrami recipie, and we just did 13lb's of top round for jerky! The jerky took up 20 sheet pans - I only have 10, I had to do it in two batches! Just imagine every horizontal surface in the kitchen covered in pans of meat. I enlisted the entire family to lay out and turn the 3 1 gallon zip-lock bags....

The pork butts are in FTC now, getting ready to pull the first one.

And to top it off, I had a friend call with 3lb's of Almonds to drop off for brining and 2 hours of Hickory.

Wow!!

Look like you had a busy day, but the rewards will be well worth it.

Yup,
The pastrami is already putting out alot of liquid, the jerky is jerking. One butt is gone, 1 vac sealed and frozen for fedex to Brother-in-Law, the other 2 will be lunch this week.
