Title: Pulled pork Enchiladas

Had a bunch of left over pulled pork so I decided to make Enchiladas with it. They turned out awesome. put the pork in a pan and added enchilada sauce, some Cumin, Chipoltle seasoning and let it simmer. They were great. ended up freezing about a dozen and the wife heats them up and has them for dinner after she gets home from work on here late nights. Just another use for leftover pulled pork.

We do them as Carnita's with some Chile sauce (home made), add tortilla and they can be Burrito's. 

What is also good is Enchilada Casserole. 

Use Corn Tortillas, pulled pork (crisped up if you like), enchilada sauce (or chile sauce) some shredded cheese.  Make layers and top with sauce and cheese and bake till nice and bubbly. For an easy sauce, I have used a McCormick Chili Pack (Hot) and made it with no meat and used that, its a good sauce, a little thick but works good.  I add some dried Cilantro some added Southwest seasoning or Chipotle powder to the sauce to kick-it-up some.
