Title: First Brisket Question
Post by: Kurt on May 13, 2008, 06:33:22 PM
I'm pretty sure I read this somewhere but can't find it again. I have my first brisket rubbed and put in the fridge, ready for the smoker tomorrow night. I can't remember, do I put the fat side up or down. I am guessing up so the fat melts down through the meat.

My wife even helped me rub the meat tonight.   ;D
