Nothing a small injection won't fix!  Mixture of butter, olive oil, garlic and black pepper.

All rubbed up and ready to go!

Into to pre-heated smoker at 218 degrees for two hours of smoke, of course mesquite!  ;D

Hellooo Baaby!  After 5 hours in the smoker!  Lookin good!

And 1 more hour in the oven, crisp the skin up and hit IT of 180

Side dish of bacon wrapped grilled asparagus - This is good stuff!

Dinner commenced, I forgot to take pictures of the aftermath...really wasan't that pretty just a bunch of bones!  ;D  Just thought I'd share!

Looks great! I am interested in the asparagus too. We usually get a ton of it and I'm always looking for something new to do with it.

Or send some my way...3.99 a lb. I don't buy it that often!   :) The asapargus is very easy simply wrap 6 spears tightly with bacon, secure with toothpicks into the smoker for no more than 20 minutes worth of smoke and then onto the grill!

But one question.... what is this 'mesquite you speak of?  ???

That's like asking if Jack the Ripper found his work to be too messy  :o ;D ;D

If it can be smoked, you can bet WTS has put mesquite on it.  I'll even bet he goes so far as to cold-smoke his tennis shoes in mesquite just to have that mesquite aroma following him around all day  ;) :D ;D

Great pics, thanks for posting them. Great way to cook chicken in the OBS and thanks for showing me how to cook them! Looks delicious.
