I'm takin' a whack at these right now.
I make the compound butter this morning, in the food processor. Kinda formed it into a log, put it in the fridge for a few hours.

Here is the recipie I am more or less following:

I am using 6 pucks of Hickory , OBS temo slider all the way to the right, vent wide open. When the pucks are done, in about 30 minutes, I am going to put them under the broiler for a few minutes on each side to crisp up.
Gonna serve with salad and Fresh Corn on the Cob.
Out of the Smoker:

Yes, Bone in. Perdue - Sams pack.
Looks like some high temp screens you got there under the bird.
Good eye, Gizmo.
I just received them this week. I've used them for almonds and this chicken.
Are those from Begolf?
Roger that, Gizmo.
FLBent...glad you liked them! I made them on Friday for some friends and tried a couple with some finely (very finely) diced chilli peppers that we're growing in the yard and mixed it in a little of the butter mixture...packed a little bit of a punch but not bad!! Flagged them with red toothpicks so they had a choice...:)
