Hey folks. I thought I'd share some pics from this past weekend of smoking. I made Asian spare ribs and chicken wings.

I seasoned the ribs overnight in Soy Sauce, Sherry, ginger and garlic

The Wings were a last minute after thought. I lightly seasoned the chix (salt, pepper, paprika, onion powder), but only let them sit for about an hour.

I put the ribs in an hour earlier than the wings. rotated and basted every hour. I used Hickory and Mesquite.

I served them at a pot-luck supper. They were a big hit.
The ribs were great. Everyone loved the wings but for me the flavor was a bit mild. I should have brined them and marinated them overnight with more rub. Does anyone else have wings seasoning suggestions?

Looks like you may of had some leakage out of the bottom of the door. When smoking/cooking chicken with skin a lot of moisture is produced, and you may have to open your vent wider.

Hi H.S. thanks for the links and the tips.I will definitely add them to the recipe section of my SMOKERS BIBLE ;) Actually I had NO leakage from the wings. But some of the fluid spilled when I pulled the tray out to baste.
Great looking grub TB, I gotta give those ribs a try.
