Anyone ever make beef bacon out of a brisket ?
I found this, after look at the dried beef - it seems like the same process as belly bacon.

Thats a cool one FL, I've made jerky out of brisket and turns out really well! Never thought about curing one....might have to gives this ago, since I'm brisket poor right now! ;D

I've tried making it from brisket, and it's like corned beef to me.
The cut that makes the best beef bacon is called the "plate", it comes from the belly of the cow, and I have been trying to find a source for a while, but may have to go on line. If you have Kutus "Great Sausage Recipes" he has a recipe for beef bacon.
I've seen beef bacon in the grocery store, not sure what cut of beef it was made from.
I'll buy some and see what it tastes like.
If it is made from the plate, it will have a good flavor if it is cured with sodium nitrite. The plate is marbled with thick fat veins, it is far different then brisket.
