Pinewood derby cars are fun too! Mine was purple with silver trim (we had a parent race too).

The cure should be done Sunday, they have instructions to soak and test-fry. Then dry, and bring back to my place for Smoking.
They voted on the smoke - it was unanimous - H I C K O R Y !!

PS - The pinewood derby "Dad category" was the only way to get the kids to build their "own" cars....

Yeah, that didn't always work though -- -I always felt bad for my son & many others who actually did their own - even though we stressed what a great job he/they did - it was hard when some of the other kids clearly did not do much of the work themselves and had these really sleek perfect cars.

FLBR, are you sure you're not from KY? Hickory is king here although I have always used apple on my bacon. I'm really proud of the project you have your scouts doing. That is just way cool.

It did not "Firm up" the way it did last time, I cured it an extra week. I'm using a dry cure recipe out of Charcuterie and I'm not sure its as strong.
But we soaked and test fryed - all good. not too salty
Drying now.
They'll get three hours of Hickory sometime this weekend.
