Title: To hot for sausage here

Well I set my PID controller to 160F as that is the temp I want when I smoke sausage. The problem when I set up the test is the generator here creates enough heat with the air temp that the box goes to 177F--with the box totally off.  Now the box is empty and no water boil in it.  I'm sure when I add a three rings of sausage and a water bowl the temp will drop, but still it I will have to watch the temp.

I have the same problem when trying to smoke at low temperature. When I smoke sausage, bacon, and hams I have to use the cold smoke set up.
