Title: Scrap iron bacon, read the recipe HCT

Going to put my SIB in the smoker shortly, it's been in the brine for 4 days and in the fridge overnite. When I read the recipe this time I read that it is to be cold smoked. Eureka!!!! The last time I made it I hot smoked it and wasn't to impressed with the outcome. How did I miss the directions? Now I'm reading all my recipes over and over just to make sure my know it all attitude doesn't get in the way again. ::) Maybe dyslexic??? :D :D :D I hate when I do that.

Sorry WCK for not posting pics, the bacon finished smoking a little late last night. My SIL tripped the power in the garage and didn't reset the circut breaker so I lost a couple of hrs. When I went to check on the bacon I noticed no smoke coming out. Kinda pissed me off, Oh well, what can ya do. The bacon came out looking good, I wrapped it tightly in saran and will give it a taste test later today. I will say it came out a lot different from the first time I made this and I hot smoked it. That time it came out dark looking, this time the bacon looks like it should be. I'll try to post a pic after I slice it.
