Being a huge fan of New Orleans food and having 3 pounds of lump crab, 20 pounds of shrimp and a pound of crawfish tails in the freezer that was screaming my name, I boiled 5 pounds of peeled shrimp in a very spicy boil and then cooled them. Took approximately 1 pound of the shrimp and coarsely chopped. Put in a large mixing bowl, added 1 pound of lump crab and 1 pound of crawfish tails. Finely diced green onions and a yellow and red bell pepper into the bowl. Sufficient mayo to moisten. Carefully fold so as to not break up the lump crab. Season to personal taste with creole seasoning and hot sauce. Add enough panko bread crumbs to bind the mixture. Form cakes about 1/2 inch thick and 2-3 inches across. Place cakes on baking sheet and into the frig for at LEAST an hour to firm. I went much longer. Out of the frig, dust with seasoned flour and saute in peanut oil until golden brown being careful not to have the oil too hot or you will have crunchy outside and cold inside. Once cooked, place on paper towel to absorb any oil. Make your favorite remoulade sauce and get out of the way before your spouse knocks you down to get to them. :D Special thanks to Mr.B's in NOLA for their original crab cake recipe from which this was adapted.
We can't eat smoked foods everyday you know. ;)

Sounds awesome KyNola. I to favor the flavorings of New Orleans. If you get tired of crab cakes (is that even possible?), you could adapt this to some seafood poor-boys. :P
Ooooo crab cakes and salmon patties! Thats some good grub there! We do the patties in the skillet and crab balls in the deep fryer! Dang now I'm hungry!

Sounds good Kynola.

WOW Ky...those sound awesome...I love crabcakes...been to NO many times....used all of my frozen crawfish in gumbo (unfortunately!!) So the recipe from NOLA eh? Very Kool!! :)
FLBR,
You will have to fight my wife for that sample! With you srill recuperating from surgery, I think she can take you. Especially if there are these cakes involved. :D
LQ: If you have not been to Mr. B's on the corner of Royal & Iberville across from the Hotel Monteleone in the FQ, I heartily recommend it. The food is out of this world and the service is first class. They have a great cookbook that is actually much simpler than one might expect. BTW, you got to get you some more crawfish tails, girl! Gumbo season will be here before you know it. Always like to make gumbo on Sunday afternoons in the Fall and Winter. Red beans and rice too!
KyNola
That's a big YUM Ky....love red beans and rice too!! Being from Florida...NO was right around the corner...college in Tallahassee so it was a straight shot from there!! Like the FQ but would like to venture out...next time I'm there...taste the "real food"!! Talked to some peeps out here in Cali...big bucks to get those puppies (crawfish) shipped (like soft shelled crabs). I can always go home to Moms and get either... :) Just a plane ride away!!!
LQ,
Lots of great places to eat over on the West Bank. Head over toward Lafitte across the Crescent City Connection, formerly known as the Greater New Orleans Bridge or Hwy 90. Great food over there.
As for crawfish, check your local supermarkets. Even here in far Western KY, I can buy one pound "bricks" of frozen crawfish tail meat at the local Kroger's and Walmart. They run about 7-8 dollars per pound and there is no waste. It's all meat. Works for me in gumbos, jambalaya, crawfish pie, etc.

Ky...I have checked...I'm in the middle of nowhere...I've seen crawfish tails...just not willing to pay the price. Really exspensive here. Thanks for the tips on NO. My hubby really wants to go! He was a musician for 25 years (piano) so he could really get into it!!!
They had whole cooked crawfish here for $3.69/lb.
KyNola/LQ - how does that compare to your market ?
$5.99/lb here in the desert.
$4.99/lb on sale this weekend here, whole cooked.....I wonder if they used mesquite..Hmmmmmm! ::)
C
On crawfish...? My god man... have you lost your mind? Forget it...I have a teabag waiting for you...try to relax....really...it painless... ;D
Teabag...other wood...other wood..teabag...other wood....other wood...Nope ribs smell amazing.....kinda like mesquite!
C
LQ,
Teabag hypnotism doesn't appear to be long term effective. I suggest attempting to tattoo WTS right between the eyes with that teabag. Load the teabag with hickory shavings and then.....Swing it very hard!
KyNola
Good point Ky...had not thought of whacking him over the head...but it does seem to be necessary at this point...hmmmm...let me think on that a bit.... :o
