I'm getting ready to roll this belly. Any input on how to getting the tightest roll on the pancetta would be appreciated. Yeah I was a decent roller way back when but this is different and I don't have to lick the edge. :D :D

Sorry I cannot be of any help with the pancetta. I've never had it before and therefore have never made it before. ???
I don't have any tricks other then to keep it as tight as possible, and make sure there are no air pockets. If one end is thinner than the other, start rolling from the thinnest end.
