Hi Everyone,

My kids have been on me to make and smoke pepperoni. There does not seem to be much info on the forum. Can you please post your recipies

The Len Poli recipes are always good too. This one is a little different than Stickbowcrafter but it does describe how to age the pepperoni.

I have never made pepperoni but from what I understand pepperoni is not normally smoked. It is dry cured and aged. That being said, I do buy Hormel brand pepperoni sticks then remove the casing, split down the middle, then cold smoke for 1-2 hours. I normally do this if there is room in the smoker while doing cheese. I also allow it to age/mellow for 1-2 weeks like I do with my cheeses. It is the best pepperoni I've had. It is even better on pizza etc.

Hi-Mountain has  pepperoni sticks kits.  I bought one but haven't had the time to do yet.
