This perks my interest! Your Brisket was DONE in 5 hours? or did you move it to the oven and finish it there? If it was done in 5 hours what was your temp? and was it tough? What was your IT after 5 hours? Just some Thunks, getting ready to do the brisket thing myself and am gathering info.
I'm sorry friends- here is the details-- I'm kinda new at this posting stuff!!
5 hours @ 210 deg with mesquite / special blend smoke--
then 15 hours @ 220 in the oven with the smoked drippings and some Jack Daniels.
Man is life good!!!

This may be stupid and I may not be catching the joke if there is one but is there a reason to use the drip tray this way. If so could someone inform me, I'm new to the bradley way of smoking things.

Upside down V-tray is not a good thing. The drippings will not collect and drain through the center hole into the water bowl if the tray is not installed properly.

I am thinking of doing a stuffed pork loin next.... any input?
you might try some fresh herbs, fresh garlic,, and your favorite rub on the loin , them your favorite bisquetts,
I also have made a sauce out of my favorite rub and olive garlic and injucted it into the meat.. talking about an infusion of flavor in the meat... ooooooooooooooooooohhhhhhhhhhhhhhhhhhhhhh
