Come on man, Casey's fairly new to the forum. Give him a couple of days before you start beating him with the mesquite stick. ;) Seriously, that looks great. I'm going to have to try that recipe. Noticed you had your new screens on the rack. How did they work out? Haven't had a chance to use mine yet.

The screens are awesome, makes clean up a breeze! Thats one of the chores I always dreaded after a smoke. I rank them pretty high on the must have list. Can't wait for cooler weather to try some salmon on them!

Excellent report on the screens WTS. Can't wait to give mine a try. My wife hated cleaning the racks too. I'm sure she will appreciate the screens. :D :D :D :D Actually, she has been most helpful.

I have a loin in the poop as we speak. Added some nutmeg, cinnamon, thyme, black pepper, salt and sugar. Also have two other loins painted with CYM and Jan's rub. After smoking, one of those will get cubed and frozen to go in gumbo during the fall and winter.
WTS is correct. The fumes from the poop will make your eyes water!
