Title: Nachos
Post by: westexasmoker on September 20, 2008, 09:40:14 AM
1.5 lb of ground beef into the smoker for an hour @ 220 then into a skillet on the oven to finish (I think next time I'll just finish it in the smoker like a fatty and then crumble it up) mixed in 1 can of rotel (diced tomatos and green chiles).  Layer of tortilla chips then meat and refried beans, mozarilla cheese, chedder cheese, taco sauce, jalapeno slices and black olives.  Pop in the oven @ 350 just till the cheese melts and its time to eat!

Yum WTS...how did you smoke the beef if not as a fatty? Even think a jerky screen wouldn't be fine enough? They look delicious! Thanks for the pic!!

So if you did make it a fatty...would you mix the jalapenos into the meat? So they both get a little smoke?
