I just bought my smoker Saturday, and smoked my first Brisket Sunday. I smoked it for about 6.5 hours and used Pecan Bisquettes. I could smell and see the smoke for the entrire process. When I pulled the brisket out, it smelled great. When I started cutting into it, I did not see any smoke ring. I tasted it, and it had not smoke flavor. It was moist and cooked like I wanted it, just no smoke flavor. It was like I had cooked it in the oven. I had it on the bottom rack w/ a turkey breast on the top rack. What did I do wrong?

NO smoke flavor. Hmmm.. that one is difficult to explain. It seems like if I put things NEAR my Bradley they start to taste like smoke.
Did the turkey taste the same way ?
The turkey had good smoke flavor, but had a little bitter of an after taste. It was moist and juicey though.
Welcome to the forum. Sounds like you may not have your vent open enough. I suspect you had too much moisture in the cabinet. Birds give off a lot of moisture. This normally also causes the cabinet temp to remain lower. I would recommend the vent setting be at least 2/3 open when doing any birds.

I'm confused too. Like FL, anything near my Bradley at least smells like smoke, including anything I'm wearing.
I was thinking it could be flavor (sensory) fatigue, but not enough information was given as to how soon he tasted the meat after it was taken out of the smoker.
Flavor or sensory fatigue is when someone is exposed to a taste or smell for a period of time (length of time can be relatively short), and due to the exposure they will build up a temporary tolerance and are less able to distinguish that particular smell or taste. So by being around the smoker for a lengthy period of time, ones senses could temporarily build up some tolerance. Thus the gas mask. :)
