Hi and I hope this is not a dumb question, but I want to get it right.

I have a corned beef brisket in the fridge starting to cure today, and want to try the Brined Smoked Pork Chops from whitetailfan, at the recipe site as well.

The brine calls for 1cup MTQ to 4 cups water. I am not sure 4 cups of water will cover the pork loin [ even cut in half ] so can the brine be doubled, to 8 cups water, 2 cups MTQ?

Thanks in advance for any help or suggestions.

You could use a ziplock bag for a container.

I don't see where doubling the brine will hurt as long as you maintain the ratio.

Yup...as long as you give the salt ratio correct...you should be good.
