Title: Fatties - simply magic

Just made another batch of Fatties, threw everything in the recipe except the kitchen sink.
4lbs. home ground chuck, 2lbs. hot italian sausage, 12 jalapenos & a couple of onions minced, garlic, powdered milk, couple of eggs, crushed red pepper, spices and herbs, a little pink salt and only God knows what else. Wrapped in bacon, some for bout an hour and brought up to 160d. Now the tough part, let them sit a couple of days, freeze what I'm not using right away. When ready to eat I'll slice it fairly thick, spread some roasted garlic on them and reheat in the oven.

When i have extra fatties i crumble some atop ritz crackers with cheese. Sorta like ritz nachos  ;D

I'm with Beefman There needs to be a lot more pictures with posts.

NePas, that powdermilk really helps, good tip.
