Printed out Nepas Carnitas recipe more than a year ago.  Finally got the chance to try it out. Slightly different from your recipe Nepas but a big thanks, this is great!  What we did,

4.5 pounds pork butt smoked for about 12 hours with hickory, cherry and a little apple to start.  Marinated in pineapple juice, apple cider, coffee, garlic, onion and pepper for 24 hours first.  FTC in the cooler for about 2 1/2 hours.  Left wrapped with towel, foil and saran wrap and put in the fridge for two days.  Unwrapped pork, mixed with Nepas recipe, (beer, spices, etc.) no Dos Equis so went with Alaskan Amber, used a whole onion and whole bulb of garlic. 

Cooked in the oven per Nepas direction.

Made Tomato and Avocado Salsa
1 large tomato, diced
1/4 cup diced red onions
1/2 jalapeno, minced
2-3 tablespoons lime juice
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1/2 avocado, diced
1/4 cup chopped fresh cilantro
1 can rinsed and drained black beans
Combine all ingredients in bowl stir

Sauteed cabbage - fresh cabbage, garlic, sautee

Flour tortillas, sour cream, cheese

Tortilla, carnitas, salsa, a little cheese, a little sour cream, sauteed cabbage = 1 fine dinner!  This was great, it was so good I put some in a tortilla the next morning, put it in the oven, heated it up and had it for breakfast, so did the wife.  Pork definitely had more of a beer taste after sitting over night.  I could think of several things to do with this without any effort at all.  Thanks again Nepas, great recipe will probably do many more pork butts in the future.

Glad you like it. There are so many ways to make carnitas.

When i was a kid growing up in S. Calif i used to watch my mom and her 4 sisters make mexican food. I grew up eating mexican almost daily. My mothers side of the family settled in Hemet way back when the dinosaurs roamed  :D  :D

Yeah i know LQ last time i was there they had walkers and was driving.......Go figure   LOL

Many, many thanks to mom, the 4 sisters and any stray cousins, nieces, etc.  Just had some more carnitas with my scrambled eggs for breakfast. We have another recipe that uses a red sauce with the butt, will be using your recipe in the future with the red sauce from the other recipe.  Can't wait!

Consiglieri, no invite needed, the door is always open but this stuff is going fast.

next time i make pork roast am going to try that recipe... sounds great
