Title: Pork Loins

Here is my try at stuffing a pork loin with something. In this case it is Jimmy Deans Hot Sausage.

I cut a "v" shape in there to lay the Sausage in.

All tied up and ready to go.

I figured if I would try the mustard and jalepeno recipe also.

Uff Da!! A good wiff of this in the food processer and that will clear out the sinuses!! :D
Good thing we had to go get family pictures taken so the house had a chance to clear out!

I let them rest in the fridge overnight and here is the finished product after 3 hours of mesquite and an IT of 160.
Both turned out very well!

They both taste very good. I think if I was to do the one stuffed with the Jimmy Dean again I would rub something on the outside of it. I didn't think about it until it was in the smoker.

That looks great, I never thought of using pork sausage to stuff the loin.  I am going to have to give this a try.  What was the total time in the smoker?

It was cold and windy outside so I had to rig this little set-up in the garage and they took about 5.5 hours. This little setup worked amazingly well and only took about a half an hour to make up. You're not kidding about the smell WTS!!  :D  :D

I like that set up....how was it when you opened the door, did a lot of smoke come out into the garage?

Gotta give a lot of credit to you guys on here with the pictures of your cool smoker set-ups!  :) I just modified it a little bit.

It actually wasn't too bad. I did have to put a little  piece of cardboard in the middle of the "Y" part itself to split the smoke coming up and the air blowing in otherwise it would blow down in the smoker a little too much. I also had to put an elbow on the outside of the garage to keep the wind from blowing back in. I am also going to make a little baffle to slow the air flow down just a little bit.

With winter coming I think I am going to duplicate your set up.  Did you experiment with any slots in the PVC right above the vent like Mike has in his setup so that you wouldn't have to make a dampner?  Also where did you get your fan?

Here is a link to my setup. Although it is modified a bit since then you will get the idea. If you look at the 4th picture you will see where I notched the 4" PVC to reduce the "draw" from the smoker.

Smokeitall, I had a friend that works in maintenance where I work order it for me. I will have to ask him and let you know.

I was going to try this next since I have to cut a little bit of the end of my tube anyway. That way I can have a couple to practice with!  :)

love the mod... if the fan is blowing  to  much.. may  want to  look into a  lower  cfm  unit or  putting a speed  controll on it

I took it apart to show you guys how I did this. This first picture is where the fan blows from. I had a piece of cardboard there, but I drew up and laser cut a thin piece of metal to put in there when I was on brake at work.  :)

This picture would be looking back at the fan. This is what I was talking about splitting the two so it doesn't blow down into the smoker too much.

Here is the view from where the smoke would rise and it won't get interrupted by the fan blowing.

Since I work in Engineering in a fab shop I laser cut this baffle to restrict the airflow a little bit.
When I was smoking the loins I actually shut the fan off and the smoke almost went outside by itself. So I figured I would cut this baffle because you really don't need that much airflow, just enough to keep it from coming back in.
