Hello all.

I just got my Bradley over the weekend, I'm looking forward to putting this baby to work.

I was curious as to what wood selection to use for "traditional pastrami".

welcome to the fourm. i use peacan about 2 hours of smoke, for some really good pastrami recipe i use this site http://www.randyq.addr.com/recipes/pastrami.htm i follow it to a tee the best i ever had. i have about 20 lbs curing right now will hit the BS on thursday.
