I am sure I am not the first one to do this and it is probably posted somewhere on the HUGE forum but thought I'd share anyway.
I smoked some spare ribs I bought at Sam's Club this weekend. I used a Cayenne Pepper rub (I love it) and rubbed them babies down and smoked for about 5 hours at 220. I saved half the fat from a brisket that I smoked about a week ago. I froze it and then defrosted and put on the top rack above the ribs. They were so good and greasy, if you don't mind the fat then this is a home run.
I just hate opening that door every half hour to 45 min so I figure the fat would "spritz" my ribs and I didn't open the door for 4 hours then checked on them and let them go 1 more hour.
I bought a PID and LOVE It. I wish I would have done it sooner. About a year ago I installed a hood in my garage and when I smoke and it is bad weather I just laugh now. I beat mother nature at her game.
