i have never made snack sticks, but would very much like to try.
where do you get your casings? do you use cure if so what type or is
there a kit you can buy that contains the ingredients?

Hey rookie
Here is my recipe for some spicy snack sticks......(its not very spicy) this does 10 lbs, if you want 5 lbs just cut everything in half
What you will need.
8 lbs beef, like eye, top and so on <this you will have to grind) OR 90% LEAN GB
1 lb pork butt
1 lb beef fat (you might have to ask for this)
5 T salt
2 t cure........#1
5 T powdered dextrose
1 t hickory liq smoke (opt)....cheating actually ;D
3 t celery powder (not salt)
3 t nutmeg
3 t curry powder
3 t white pepper
1 Cup cold water
1 Cup powdered non fat dry milk
19 or 26mm natural or collagen casings
Preperation:
1. Grind meats and fat through med plate 1 time.
2. Mix ground mixture with all ingredients.....(except casings) in a large plastic bowl or tub until mix gets tacky.
3. Regrind mix through plate one more time
4. Stuff into casing. You can leave long or twist. If useing collagen and twist into 8" length. Refrigerate links overnite.
5. Hang sticks or on racks in smoker, dont let em touch. While this is being done your BS is pre heating at 130* Right ;D
6. Insert a cooking probe into 1 of the sticks, place sticks in your heated BS NO SMOKE. Hold at this temp for 1 hour until tacky to the touch
7. When sticks ary dry but tacky turn heat to 150* start smoke 1 hour. Add small amount of water to pan, about 2" vent full open.
8. On the 3rd hour increase temp to 170* continue smoke/cooking until the IT of the probe you inserted reaches 152/155*
9. When you get the IT temp, turn off smoker and open door. DO NOT RINSE THE STICKS WITH WATER. Let them cool on the rod or racks slowly. Remove sticks when they are cool and shriveled.
Hope this helps some. BTW You can use your choice of wood.

I've been to 2 ortho's in 2 days. 1 shoulder (only 9 more days in the sling!) 1 knee - no cut for that either - YES! - Just more physical therapy - since I'm there for the shoulder anyways...

WOW FLB good luck.
I broke both shoulders, right orbit, compressed 6 disks, 2 torn and this was back in 2001 and they are just now doing something about it all after i complained all this time.

NO NO NO , You're killin' me over here with that stuff, I don't have a stuffer up north here for that stuff , NO NO NO not getting another one for here, have no room now out here at the carnie. I already gave in to another Bradley and a slicer plus all the goodies (Mavreck, DigiQ etc) The answer is NO, not gonna do it :-\
