I haven't had the pleasure of getting any quail to try a hot smoke with. But I think WTS is one the right track to wrap them in bacon to keep them from drying out.
Hello Harry and welcome to the forum. I have not done quail in the Bradley either but have raised many quail of various breeds in the past. Quail has to be treated as a game bird even if pen raised, in other words low fat and quick to dry out. I am big on marinades and am learning about brines. I would suggest either for your quail, apple cider or juice is a good place to start. Other than that treat as any other fowl but adjust time for weight, less fat and I am assuming skinless. I have smoked or cooked quail in other equipment and really enjoyed it. If you can find a recipe you can also treat it as you would pigeon, dove or pheasant. Good luck and let us know the results.

I have a great Idea since you have all them quail running around. Send ten of them to WTS and Stillsmoking and ten to myself and we will come up with a great recipe for you!!
Harry, I think Tenpoint may be on to something there. Can't quite trust the Post Office here though so better make it two shipments of 20! I promise I will send a recipe, really!
Quail makes for a killer ABT! Did some for a friend in the Bradley. He had his own marinade so cant help with that.
