Title: Big Easy Tips

Well, we got our order of Big Easy's in so of course I am getting one for myself :)

I plan on trying it out this weekend. Does anyone have any tips for using this thing? Oldman gave me probably the most important one. Don't stick your arm into the fryer if it is on to check the meat temp. Be sure to use the hook and pull the food out or you will lose some arm hairs!

Has anyone tried doing wings in their Big Easy yet? I don't remember seeing a post with wings.

Bryan,

There are a couple posts with wings.  I'll see if I can find. 

I have only used mine a couple of times and have not mastered yet.  Haven't lost any arm hair but I do Know that it is hot in there ;D , I too advise pulling out the basket before using the thermapen.

Hi Bryan

Here are some pics of the ones I've done. This was my first batch. I done them a number of times now. I usually give them a light dusting of corn starch now which makes them unbelievably crispy.

Brian, don't forget to season it first before the first cook. I have hinged basket they offer and it works well. Makes whole birds easier to handle. Well worth the extra 20 for me.

I smoked chicken quarters  for 2 1/2 hours and than in the big easy to crisp up the skin for 20 minutes and they were great.
